Bookclub was at my house last night. We had our newest little member Naomi with us & she did great. Addie liked peeking at her & Etta had to be held back as she lunged at her & drooled over her. I do not think she was going to take a bite of the baby, but she sure was interested.
We read The Help so the menu had to be southern of course. Sweet tea, fried chicken, coleslaw, buttermilk biscuits, chocolate pie, and some french onion soup thrown in there, not because it is southern in the least but because I had it & it sounded yummy.
Here is a link to the chocolate pie recipe. It was very brownie-like & needed ice cream, whip cream, or both to balance it! There is also a more mousse-like southern chocolate pie that would be more accurate to the story.
If you want the recipe for the fried chicken I served, you would have to ask the QFC deli for it :)
But here is the buttermilk biscuits recipe straight off the Organic Valley Buttermilk carton:
2 cups flour, sifted (I never do)
1/s tsp sea salt (I just used regular salt)
1 Tbs sugar
2 tsp baking powder
10 Tbs butter (I only used 8) chilled, cut into small pieces
2/3 cup buttermilk, chilled
Mix flour, sugar, salt, & baking powder. Using a fork or your fingers, mix in butter until course crumbs. (in the past I always used a pastry blender. This time I use my fingers & liked it a lot more. The repetitive motion of the pastry blender can make my hand sore. Crumbing it with my fingers is much more enjoyable & relaxing!)
With fork, slowly stir in buttermilk until moist clumps form. Shape into ball & put on floured surface. Roll out & cut into 3 inch rounds.
Cook on baking sheet covered with parchment paper for 20 minutes at 375. Great with butter, honey or grandma Ellie's freezer jam!
